Easy to make, delicious to eat, good for the gut. This power-packed salad will become a house favorite in no time, making it a must-try!
Ingredients:
- Shredded raw (green) papaya - 2 cups
- Shredded carrots - 1 cup
- Shredded zucchini - 2 cups
- Choppe mint - 1 fistful
- Lemon juice - 1 tbsp
- Honey/Maple syrup - 3 tbsp
- Soy sauce - 2 tbsp
- Minced garlic - 1 tsp
- Red chili flakes - 1 tsp
- Salt - to taste
- Roasted and roughly crushed peanuts - 3 tbsp
Method:
- Mince the garlic
- Squeeze the juice from the lemon
- Marinate together - lemon juice, honey/maple syrup, soy sauce, minced garlic, red chili flakes, and salt. Let it sit for at least 20 minutes while shredding the veggies
- Peel the raw papaya and carrots
- Shred the papaya, carrots, and zucchini into juliennes and put them in a bowl
- Add chopped mint
- Roast and skin the peanuts. Crush them roughly
- Mix the marinated dressing into the shredded vegetables
- Mix the crushed, roasted peanuts
- Toss them all well and serve immediately
