Raw Papaya Salad

Easy to make, delicious to eat, good for the gut. This power-packed salad will become a house favorite in no time, making it a must-try! 


Ingredients:

  • Shredded raw (green) papaya - 2 cups
  • Shredded carrots - 1 cup
  • Shredded zucchini - 2 cups 
  • Choppe mint - 1 fistful
  • Lemon juice - 1 tbsp
  • Honey/Maple syrup - 3 tbsp
  • Soy sauce - 2 tbsp
  • Minced garlic - 1 tsp
  • Red chili flakes - 1 tsp
  • Salt - to taste
  • Roasted and roughly crushed peanuts - 3 tbsp

Method:

  • Mince the garlic
  • Squeeze the juice from the lemon
  • Marinate together - lemon juice, honey/maple syrup, soy sauce, minced garlic, red chili flakes, and salt.  Let it sit for at least 20 minutes while shredding the veggies
  • Peel the raw papaya and carrots
  • Shred the papaya, carrots, and zucchini into juliennes and put them in a bowl
  • Add chopped mint
  • Roast and skin the peanuts.  Crush them roughly
  • Mix the marinated dressing into the shredded vegetables
  • Mix the crushed, roasted peanuts
  • Toss them all well and serve immediately


Tips and Tricks:

  • Marinating the dressing helps incorporate all the flavors well
  • The longer the veggies sit in the dressing, the more water they release.  Hence, it is better to serve soon after tossing them with the dressing
