This accompaniment moistens the dish it is eaten with and enhances digestion. Gut health gets better due to the good bacteria in the yogurt.
Ingredients:
- Yogurt - 2.5 cups
- Green chili paste - 1 tsp
- Salt
- Cucumbers (or) Carrots (or) Tomatoes (or) Onions - 1.5 cups
- Coriander leaves (optional) - 1 tbsp
- Mustard seed and urad daal tadka (seasoning) if desired
Method:
- Beat the yogurt to break the lumps
- Mix in green chilies and salt uniformly
- To this, add shredded/chopped vegetable/s chosen, along with chopped coriander leaves (if using)
- Let it sit for a few minutes before serving, so that all the juices will incorporate well
- If using the tadka, heat a little oil, add mustard seeds and urad daal. Top it on the raita
- Mix well and serve as an accompaniment with any rice dishes like pulav, biryani or even chapati
