Raita

This accompaniment moistens the dish it is eaten with and enhances digestion.  Gut health gets better due to the good bacteria in the yogurt.

 

Ingredients:

  • Yogurt - 2.5 cups
  • Green chili paste - 1 tsp
  • Salt 
  • Cucumbers (or) Carrots (or) Tomatoes (or) Onions - 1.5 cups
  • Coriander leaves (optional) - 1 tbsp
  • Mustard seed and urad daal tadka (seasoning) if desired 

Method:

  • Beat the yogurt to break the lumps
  • Mix in green chilies and salt uniformly
  • To this, add shredded/chopped vegetable/s chosen, along with chopped coriander leaves (if using)
  • Let it sit for a few minutes before serving, so that all the juices will incorporate well
  • If using the tadka, heat a little oil, add mustard seeds and urad daal.  Top it on the raita
  • Mix well and serve as an accompaniment with any rice dishes like pulav, biryani or even chapati


Tips and Tricks:

  • If using tadka, add it just before serving to keep the crunch of the roasted urad daal
  • Veggies can be used in combination, as preferred (few are shown below)
