Garlic Parmesan Pasta

This simple pasta recipe with minimal ingredients is versatile and can be modified per the preference of toppings, etc.



Ingredients:

  • Pasta - 1 lb
  • Garlic - 6-8 cloves
  • Bell peppers - 1 cup, thinly sliced
  • Black olives - 0.5 cup (optional) 
  • Black pepper powder - 0.5 tsp
  • Red chili garlic paste - 1 tsp
  • Basil - 8-10 leaves
  • Parmesan cheese - 2 tbsp

Method:

  • In a pasta pot, cook the pasta 'al dente' (firm to the bite) in water and salt
  • Drain it, wash with cold water and keep aside
  • In some oil, saute the garlic cloves until they turn slightly brown
  • Add the bell peppers and saute on high flame
  • When the oil separates, add black pepper powder, red chili garlic paste and salt
  • To this, add the pasta and toss well so that all the pasta is coated with the spices and veggies
  • Sprinkle parmesan and basil.  Mix well
  • Serve hot


Tips and Tricks:

  • Time taken to cook the pasta varies as per the thickness of the pasta being used
  • Adding salt to the pasta assures even salting of the dish
  • High flame ensures that the bell peppers remain crunchy and yet cooked
