A perfect combination of the sweetness of fruit and a spicy kick of jalapenos. This dip/sauce will make chips disappear faster! Makes sandwiches delicious with its fruity flavor and spice.
Ingredients:
- Peaches - 2 large
- Jalapeno - 1 medium
- Lemon juice - 2 tsp
- Salt - 0.25 tsp
- Sugar - 4 tsp
Method:
- Wedge the peaches
- Deseed and finely chop the jalapenos
- In a small vessel, place all the above ingredients and sprinkle quarter cup of water
- In a cooker-vessel place a trivet and half a cup of water
- Place the vessel with the ingredients on the trivet
- Pressure cook ('Pressure' mode in IP for 7 minutes)
- When done, pour the cooked fruit, etc into a blender and pulse (doesn't have to be fully smooth)
- Pour it into a vessel and cook it on low flame for 5 to 7 minutes, until it thickens
- Pour it out into a serving bowl and serve with some nachos, chips or use it as an accompaniment with burgers or sandwiches!
