Jalapeno Peach Dip/Sauce

A perfect combination of the sweetness of fruit and a spicy kick of jalapenos.  This dip/sauce will make chips disappear faster!  Makes sandwiches delicious with its fruity flavor and spice.


Ingredients:

  • Peaches - 2 large
  • Jalapeno - 1 medium
  • Lemon juice - 2 tsp
  • Salt - 0.25 tsp
  • Sugar - 4 tsp

Method:

  • Wedge the peaches
  • Deseed and finely chop the jalapenos 
  • In a small vessel, place all the above ingredients and sprinkle quarter cup of water
  • In a cooker-vessel place a trivet and half a cup of water
  • Place the vessel with the ingredients on the trivet
  • Pressure cook ('Pressure' mode in IP for 7 minutes)
  • When done, pour the cooked fruit, etc into a blender and pulse (doesn't have to be fully smooth)
  • Pour it into a vessel and cook it on low flame for 5 to 7 minutes, until it thickens  
  • Pour it out into a serving bowl and serve with some nachos, chips or use it as an accompaniment with burgers or sandwiches! 


Tips and Tricks:

  • Use very little salt or the dip will become too salty
  • Be careful while handling jalapenos!  Deseed, chop and wash hands immediately to avoid burning sensation or touching eyes accidentally!
