Mint Watermelon Salad

On a hot summer's day, this name alone is sufficient to entice anyone into trying this refreshing summer salad.  Made quickly with few and fresh ingredients, it will rejuvenate anyone instantly!
  


Ingredients:

  • Diced watermelon - 4 cups
  • Mint - 1 fistful
  • Honey - 2 tbsp (to make it vegan-friendly, use any prefered sweetener accordingly) 
  • Salt
  • Black pepper powder - 1 tsp

Method:

  • Dice the watermelon into cubes 
  • Chop the mint leaves
  • Sprinkle the salt and black pepper
  • Drizzle honey over it
  • Toss together and serve immediately!


Tips and Tricks:

  • Do not throw away the watermelon rind.  Many dishes can be made using the white part of the watermelon rind
  • Toss the salad only when ready to serve.  If the watermelon comes in contact with salt and sits, it will leave water and all the flavors will settle in the liquid at the bottom
