This breakfast/dessert bake is both nutritious and delicious. Made with minimal oils and sugar, this recipe incorporates vegetable, fruit and nuts in a unique fashion. Surprisingly, no one will ever know what it is made of! Given the ease of making, it is a must-try.
Ingredients:
- Wheat flour - 1.25 cups
- All-purpose flour - 1 cup
- Rolled oats/oatmeal - 1.25 heaped cup
- Baking soda - 1 tsp
- Baking powder - 1 tsp
- Salt - 1 tsp
- Cinnamon powder - 2 tsp
- Eggs - 3
- Brown sugar - 1.75 cups
- Coconut oil - 0.5 cup
- Applesauce - 1 cup (2 medium apples)
- Vanilla extract - 3 tsp
- Grated zucchini - 3-4 cups
- Chopped walnuts and pumpkin seeds - 1 cup or more (as per preference)
Method:
- Set the oven to preheat at 325° F (165° C)
- Oil the baking pans, dust with flour and set aside
- Add the rolled oats in a vessel
- Into that vessel, sift together wheat flour, all-purpose flour, baking soda, baking powder, salt and cinnamon powder
- In another large vessel, add the eggs, brown sugar (or turbinado sugar), coconut oil, apple sauce and vanilla extract
- Beat them all together with a hand blender
- Add the dry ingredients and beat till they mix well
- Add zucchini and nuts and fold into the batter until incorporated
- Pour the batter into the prepared baking pans
- Lightly tap the pans a few times on the counter to release any trapped air
- Put the pan in the oven and bake for up to 55 minutes
- Check for doneness by sticking a toothpick at the centre. If it comes out clean, the cake is ready
- Remove the pan from the oven and set it outside to cool
- After 15-20 minutes, release the cake from the pan and set it on a wire rack to cool completely
- Slice and enjoy with a cup of tea or coffee
- Note: If need be, this cake freezes well. Store some away and enjoy another day
Tips and Tricks:
- Use porcelain bakeware for easy cleanup
- Turbinado sugar works very well both for color and sweetness
- Using oats and wheat makes it much healthier than a plain flour cake
- Sweetness in the applesauce reduces the need for more sugar
- The moisture in the applesauce reduces the oil quantity in the recipe
- Applesauce can be made instantly at home by just blending the cored apples along with some sugar that is being used in the recipe
- Tapping the pans before baking releases any trapped air bubbles in the batter. The avoids an elevated centre when the cake is ready
