Corn and Peanuts Chaat

Contrasting textures and unique flavors come together in making this delectable snack.  When made like this, the peanuts taste exactly like peanuts boiled in the shell, only with much less effort.  The pungent crispness of the onions, the soft protein-packed peanuts, the tender sweetness of the corn, along with the different spices come together so well that it leaves a lingering taste in the mouth for a long time!


Ingredients:

  • Shelled peanuts - 1 cup
  • Corn kernels - 1 cup (use frozen ones if preferred)
  • Onion - 0.5 cup
  • Coriander leaves - 1 fistful
  • Salt
  • Jaggery (or) brown sugar - 2 tbsp
  • Turmeric - 0.5 tsp
  • Chaat masala - 1 tsp
  • Kaala namak (Black salt) - 1 tsp
  • Green chili paste - 0.75 tsp
  • Lemon/lime - one half

Method:

  • Wash and soak the peanuts for 2 hrs (Soaking is optional if using boxed peanuts.  Not required if using fresh ones.)
  • Drain the peanuts and rinse with fresh water
  • Add the peanuts to a pressure cooker vessel along with turmeric, jaggery and some salt
  • Add 2 cups of water
  • Pressure cook until they are cooked softer than al dente ('Bean' mode in IP works best)
  • When cooked, drain the water and save it for later use
  • Place corn kernels in a microwavable bowl
  • Sprinkle some salt and mix
  • Cover and cook till soft (about 4 mins) in the microwave
  • Chop the onions and coriander leaves
  • Mix the cooked peanuts and corn
  • Add the onions, green chili paste, chaat masala, kaala namak, lemon juice and coriander leaves
  • Toss them well together and serve with a garnish of a few more coriander leaves


Tips and Tricks:

  • Soaking boxed peanuts helps in cooking them faster with a nicer texture 
  • Soaking boxed peanuts reduces their gassy, bloating effects as well 
  • Adding turmeric cooks them faster
  • Jaggery brings out their natural sweetness better
  • The water in which the peanuts have cooked can be saved and used as broth in any other recipes later
