Made with minimal ingredients, this refreshing salad is a chock-full of goodness and flavors. This is a combination to keep going back to!
Ingredients:
- Cubed cucumbers - 1 cup
- Chopped spinach - 0.5 cup
- Diced bell peppers - 0.25 cup
- Oil - 0.5 tsp (optional)
- Kiwi dressing/dip - 2-3 tbsp
Method:
- Chop the spinach in strips
- Cube the cucumbers
- Dice the bell peppers and roast it in a tsp of oil, if preferred. If not, could be used raw
- Spread them in layers in the above order
- Pour Kiwi dressing/dip generously and serve
