Want a summery dressing/dip for salads or just a delectable accompaniment for the chips or sandwiches? This recipe is just that! With an exotic taste as well as appearance, this is inviting.
Ingredients:
- Kiwi fruit - 6-8
- White onion - 1 small
- Green chili paste - 0.5 tsp
- Salt
- Honey - 4-5 tbsp
- Lemon/lime - 1
- Oil - 2 tbsp
Method:
- Chop the onions and kiwis
- In a food processor, pulse onions, green chilies, salt, honey and lemon/lime juice
- Pour it into a vessel and pulse the kiwi fruit in the food processor
- Pour it into the processed onions, along with the oil
- Mix them together with a wire whisk
- Store it in the refrigerator
- This is a great accompaniment with fruit salad or even vegetable salads (can be used as a vinaigrette dressing). Goes well with some sandwiches or as a dip with chips too!
Tips and Tricks:
- White onions are better as they are sweeter (not as sharp in taste as the red ones) and also will not clash with the beautiful green color of the kiwis
- Onions are slightly harder in texture than the kiwi fruit. Hence pulsing them first will keep the texture even
- Pulsing the kiwis after the onions makes clean up easier
- This dressing tastes better the next day as the pungency of the onions would have reduced and all the flavors would have marinated well together
