Guacomole

A great side dish that goes well with nacho chips as an appetizer or along with the main meal like Burritos, Quesadillas or Enchiladas.  Made with healthy and delicious ingredients, it is a must-try for all the right reasons! 


Ingredients:

  • Ripe avocados - 3
  • Lemon - 1
  • Tomatoes - 2 medium
  • Red onion - 1 medium
  • Spring onion - 1 stalk (optional)
  • Chopped coriander leaves - 1 fistful
  • Green chili paste - 0.5 tsp (or) Jalepeno - 1 
  • Salt

Method:

  • Finely chop the tomatoes, red onion, spring onion (if using) and coriander leaves
  • Zest the lemon and squeeze the juice
  • Scoop out the flesh of the avocado into a mixing bowl
  • Immediately add the zest and lemon juice over the avocados
  • Mash the avocados with a fork
  • Add the green chili paste and mix a little
  • Add the salt, chopped tomatoes, red onion, spring onion and coriander leaves 
  • Mix well with a ladle
  • Serve with nacho chips or with any Mexican delicacies like Burritos, Quesadillas, Mexican rice, Enchiladas or Fajitas.  (Due to the zest, lemon juice and tomatoes, the avocados will not lose color or darken for quite some time)


Tips and Tricks:

  • To get perfect avocados, place firm avocados in a brown paper bag and fold over to close.  Leave it aside for a couple days until they become soft.  Use it (or) store it in the refrigerator for later use (they can stay good for 7-10 days in the fridge)
  • Zest increases the lemony flavor along with the juice
  • Adding lemon juice and zest immediately to the avocado, even before mashing, keeps the avocados from turning black 
  • Spring onions add to the flavor and texture along with the onions
