This salad can be made with as many or as few ingredients as preferred. It is just a matter of picking a favorite combination, presenting it beautifully and enjoying it!
Ingredients:
- Spinach
- Squash
- Carrots
- Beets
- Broccoli
- Bell peppers
- Cucumbers
- Black beans (1 can)
- Fresh green peas
- Pumpkin seeds/Walnuts/Pecans
- Salad dressing of choice (Avocado Yogurt Dressing)
Method:
- Wash and peel all vegetables
- Slice spinach and bell peppers into long strips
- Ripple cut (for a fancy touch :) squash and cucumbers
- Grate carrots and beets
- Make small broccoli flowerets
- In a wide dish, layer all these veggies in the desired order (the above-listed order was to present it colorfully)
- Top with pumpkin seeds or any other preferred seeds to add crunch
- Enjoy with your favorite salad dressing (Avacado Yogurt Dressing shown in the picture)
