Multi-Layered Salad

This salad can be made with as many or as few ingredients as preferred.  It is just a matter of picking a favorite combination, presenting it beautifully and enjoying it! 



Ingredients:

  • Spinach
  • Squash
  • Carrots
  • Beets
  • Broccoli
  • Bell peppers
  • Cucumbers
  • Black beans (1 can)
  • Fresh green peas
  • Pumpkin seeds/Walnuts/Pecans
  • Salad dressing of choice (Avocado Yogurt Dressing)

Method:

  • Wash and peel all vegetables
  • Slice spinach and bell peppers into long strips
  • Ripple cut (for a fancy touch :) squash and cucumbers
  • Grate carrots and beets
  • Make small broccoli flowerets
  • In a wide dish, layer all these veggies in the desired order (the above-listed order was to present it colorfully)
  • Top with pumpkin seeds or any other preferred seeds to add crunch
  • Enjoy with your favorite salad dressing (Avacado Yogurt Dressing shown in the picture)


Tips and Tricks:

  • Be sure to scoop the salad vertically to get all the layers and flavors
  • Can change the veggies as per preference or availability
