Bhel - King of chaats!

This mouthwatering street food can be an instant craving, just upon thinking of it :).  Easy to whip up quickly but lingers on the taste buds for a long time!  Try out this lip-smacking snack with some hot chai or even for a fun dinner!!



Ingredients:

  • Finely chopped tomato - 1 large
  • Finely chopped onion - 1 medium
  • Grated carrot - 1
  • Finely chopped cucumber (optional) - 1
  • Chopped coriander leaves - 1 fistful
  • Grated green mango (or) lemon 
  • Potatoes - 2 medium 
  • Tomato ketchup - 4 tsp
  • Green chutney (optional) - 1 tsp
  • Sambar powder (instead of spicy chutney) 
  • Chaat masala
  • Salt 
  • Sugar (instead of sweet chutney)
  • Roasted peanuts (optional)
  • Puffed rice - 4- cups
  • Sev 

Method:

  • Boil the potatoes ('Pressure' mode for 6 mins in IP (or) 2 mins in the microwave, covered)
  • Peel (optional) and crush the potatoes
  • Mix all the ingredients in a large bowl except puffed rice and sev
  • Let it sit for a few minutes
  • Mix in the puffed rice, sev and peanuts
  • Scoop it out into a serving dish and garnish with some coriander leaves
  • Enjoy with the accompaniment of hot masala tea! 

Tips and Tricks:

  • Sitting the veggies mixed with salt and spices will make the vegetables release water.  This extra water, now flavored with the spices adds to the flavor of the bhel and keeps it moist also
  • Cucumbers add a moist crunch and flavor
  • Peanuts give additional crunch and texture
