Although this is not a favorite vegetable for many, it is a very healthy and essential one too. Made quickly with this method, it is sure to become palatable to many!
Ingredients:
- Bitter Gourd - 6 (deseeded and cubed)
- Mustard seeds - 0.5 tsp
- Cumin seeds - 1 tsp
- Curry leaves - 8-10 leaves
- Turmeric - 0.5 tsp
- Sambar powder - 1 tsp
- Tamarind - a lemon sized fruit (or) 1 tsp of paste
- Salt - per taste
- Jaggery (or) brown sugar - 0.75 tsp
Method:
- Season oil in a pressure cooker (Instant Pot works best)
- Set to saute mode and add mustard seeds, cumin seeds and curry leaves
- Add turmeric powder or fresh grated raw turmeric
- Add cubed bitter gourd and saute till the raw smell goes away
- Add sambar powder, salt, jaggery/sugar, tamarind paste (use as little liquid as possible)
- If using thick tamarind paste, add 2 tsp of water
- Mix well and deglaze
- Cover and pressure cook for 3 minutes
- Serve hot with hot rice and ghee (optional)!
