Banana Nut Bread

Have very ripe bananas? It is very gratifying to serve this banana bread with minimal and common ingredients.  Check out this sumptuous, moist bread with coffee or tea this evening.  

 

Ingredients:

  • All-purpose flour (or) whole wheat flour - 1.75 cups 
  • Sugar - 0.75 cups
  • Ripe bananas - 3 large
  • Butter (or) oil - 0.5 cups
  • Eggs - 2 large (or) Applesauce - 0.5 cups 
  • Chopped nuts of choice - 1 cup (walnuts, pecans, pumpkin seeds, sunflower seeds)
  • Baking powder - 1 tsp
  • Baking soda - 0.25 tsp
  • Cinnamon powder - 1 tsp
  • Nutmeg - 0.5 tsp (optional)
  • Salt - 0.25 tsp
  • Vanilla essence - 1 tsp
  • Whip cream (optional)

Method:

  • Set the oven (or Air Fryer) to preheat at 350° F (180° C)
  • Melt the butter (if using) and cool
  • Glaze the bottom and sides of the pan with some butter (or oil)
  • In a large bowl, mash the bananas with a fork
  • On a side, in the same bowl, lightly beat the eggs (if using, or use applesauce to make it vegan friendly) and incorporate it with the bananas
  • Add the melted butter (or oil), vanilla essence and mix
  • Mix all the dry ingredients together and add into the bowl
  • Gently fold in the dry ingredients until combined, without over mixing
  • Transfer the batter into the buttered/oiled pan
  • Smooth the top gently with the spatula
  • Bake until a toothpick comes clean at the centre of the bread (about 45-55 mins.; depends on the oven and the pan being used)  (or) 15-20 minutes in the air fryer 
  • Remove when done and let it sit for 5 minutes
  • Loosen from the sides of the pan and set in a tray 
  • Slice and serve warm or at room temperature
  • Top it with some whipped cream or cool whip (optional) for extra pizzazz


Tips and Tricks:

  • Overmixing the batter will yield tough rubbery bread.  Avoid doing this
  • The loaf might open at the top, that is very normal
  • Use porcelain bakeware for easy cleanup
  • If using porcelain, butter can be melted in it using a microwave
  • Buttering can be done by just swishing the melted butter around in the pan and pouring it out into the batter later, saving a vessel from washing
  • Butter should have cooled down to room temperature or the eggs will scramble under the heat before making the batter
  • Using wheat flour instead of all-purpose flour makes it a healthier option due to added fibre

  1. Made this bread last night. It came out so moist and so delicious! Every ingredient was the perfect amount. All I did was just add a few chocolate chips on top, because I just love chocolate, other than that it was made exactly the way as you instructed. Thank you for sharing. This will definitely be one that I use over and over!
