This typical Karnataka dish (also called Doskai Saasva), made out of fresh cucumbers is eaten with rice. A 'perfect for summer' dish, ready in 15 minutes, with minimum ingredients and no cooking involved!!


Ingredients:
- Finely chopped cucumber - 2.5 cups
- Grated coconut - 1 cup
- Roasted gram (daliya) - 1 tbsp
- Cumin - 1 tsp
- Green chili paste - 1 tsp
- Salt
- Turmeric - 0.5 tsp
- Yogurt - 2 cups
- Curry leaves - 2 stalks
- Coriander leaves - small fistful (optional)
- Mustard seeds - 1 tsp
- Asafoetida (hing) - 2 pinches
Method:
- Peel and finely chop the cucumber
- In a tsp of oil, season mustard seeds, hing and curry leaves. Turn off the stove and set aside
- Grind coconut, roasted gram, cumin, green chilies (or paste), salt and turmeric
- Pour it into the seasoning and mix in the yogurt and chopped coriander leaves (if using)
- No cooking of anything involved. Note that all ingredients are raw (except the seasoning of mustard seeds, of course)
- To this gravy, add the chopped cucumbers right before serving
- Enjoy this refreshing entree with hot rice
