Perfect soup for a cold night or if craving for a flavorful soup! With minimal ingredients, this can be an appetizing starter or a satiating main dish itself.
Ingredients:
- Chopped carrots - 2.5 cups
- Ginger - 2 inches
- Onion - 1 medium
- Black pepper - 1 tsp
- Cloves - 6
- Cinnamon - 1 inch
- Salt
- Oil - 1 tbsp
- Minced onions - 2 tsp
- Rosemary - 1 sprig
Method:
- Peel and chop the carrots and ginger
- Slice the onions
- Heat a pressure cooker vessel and add the oil
- Add the cloves, cinnamon and black pepper to it
- After a few seconds, add the chopped ginger and saute till it turns aromatic
- Add the onions and saute till translucent
- Add the carrots and saute well
- Add 3 cups of water, salt and close the pressure cooker
- Pressure cook well ('Pressure' mode for 6 min in IP)
- When cooled a little, transfer the contents into a blender jar and blend smooth
- Strain it through a sieve and heat it a well
- Ladle the soup into serving bowls
- Sprinkle some minced onions, rosemary leaves and serve hot!
