Carrot Ginger Soup

Perfect soup for a cold night or if craving for a flavorful soup!  With minimal ingredients, this can be an appetizing starter or a satiating main dish itself.


Ingredients:

  • Chopped carrots - 2.5 cups
  • Ginger - 2 inches
  • Onion - 1 medium
  • Black pepper - 1 tsp
  • Cloves - 6
  • Cinnamon - 1 inch
  • Salt
  • Oil - 1 tbsp
  • Minced onions - 2 tsp
  • Rosemary - 1 sprig

Method:

  • Peel and chop the carrots and ginger
  • Slice the onions
  • Heat a pressure cooker vessel and add the oil
  • Add the cloves, cinnamon and black pepper to it
  • After a few seconds, add the chopped ginger and saute till it turns aromatic
  • Add the onions and saute till translucent 
  • Add the carrots and saute well
  • Add 3 cups of water, salt and close the pressure cooker
  • Pressure cook well ('Pressure' mode for 6 min in IP)
  • When cooled a little, transfer the contents into a blender jar and blend smooth
  • Strain it through a sieve and heat it a well
  • Ladle the soup into serving bowls 
  • Sprinkle some minced onions, rosemary leaves and serve hot! 


Tips and Tricks:

  • Be sure to saute the ginger till aromatic.  This kicks up the flavor of ginger nicely
  • Adding the spices while sauteeing integrates the flavors well into the soup
  • Although straining doesn't catch much residue, doing so gives a smoother texture to the soup
