Baked Sweet Potatoes in Instant Pot

Requiring minimal active time as well as ingredients, this nutritious dish is especially enjoyed by kids.  Easily personalized with different flavorings, it can be a filling evening snack or a side with a meal.  The ease of making it in the Instant Pot is an added bonus!


Ingredients:

  • Sweet potatoes - 4 
  • Butter - 2 squares (optional)
  • Finely chopped thyme (or) oregano (or) rosemary (or) pineapple mint (or) pineapple sage (or) lemon balm - 2 tsp (optional)

Method:

  • Wash the sweet potatoes 
  • Place a trivet in the Instant Pot
  • Add one cup of water to the inner pot
  • Arrange the sweet potatoes on the trivet
  • Cover the lid and set it on 'Pressure' mode for 8 minutes
  • Open the lid after the pressure is released naturally
  • Rinse under water and peel the sweet potatoes
  • Slice them as desired and serve warm
  • Optionally, top the slices with some butter and sprinkle some finely chopped flavorings like rosemary, thyme or the like, as preferred


Tips and Tricks:

  • More sweet potatoes can be stacked upon each other if needed.  It will not change the procedure, water or the time needed to cook them
  • If the sweet potatoes are thicker, just add an extra minute to the cooking.  Be sure to not increase it by too much or the potatoes will become mushy
