Watermelon with onions, olives, cheese, herbs and nuts...?! This seemingly uncommon combination of ingredients come together to make a surprisingly delicious salad! A refreshing way to enjoy this invigorating summer fruit.
Ingredients:
- Chopped watermelon - 4 cups
- Red onion - 1 medium
- Black olives - 1 can
- Pineapple sage (or) pineapple mint (or) mint leaves - 2 fistfuls
- Feta cheese - 4 tbsp
- Walnuts - 2 fistfuls
- Lemon juice - 2 tbsp
- Oil - 1 tbsp
- Salt - only 2 pinches
- Black pepper powder - 0.5 tsp
- Red chili flakes - 0.25 tsp
Method:
- In a glass bottle, add oil, lemon juice, salt, black pepper and red chili flakes
- Shake them well together
- Thinly slice the red onions
- Pickle them by adding into the lemon liquid and shaking them all together
- Set it aside for at least half an hour to infuse the flavors into each other
- Chop the watermelon, black olives (if whole), herb leaves (sage or mint) and walnuts
- Place the watermelon in a bowl
- Spread some pickled onions and the juices over it
- Scatter some black olives along with chopped herb leaves
- Crumble feta cheese over it and top it off with some chopped walnuts
- Toss them all together and serve immediately
