Avocado Cilantro Rice

So easy to make this weirdly delicious, flavored, lemony rice.  When paired with soft avocados that mush up in the mouth and add richness to every bite, it is just delightful to eat!  Eliminate the green chilies to make it kid-friendly and an instant favorite. 


Ingredients:

  • Avocados - 3 ripe
  • Rice - 2 cups
  • Onion - 1 large
  • Garlic - 6 pods 
  • Green chilies - 6-8
  • Salt
  • Cilantro (or Coriander leaves) - 1 fistful
  • Lemon - 1 (zest and juice)

Method:

  • Chop the onions, garlic, green chilies and cilantro/coriander leaves
  • Zest and juice the lemons
  • Heat some oil in a pressure cooker vessel and add chopped garlic ('Saute' mode in IP) 
  • After a minute, add the chopped onions and saute well
  • Add the finely chopped green chilies and mix  
  • Add the washed and drained rice
  • Add salt and mix well
  • Add 3 cups of water (1:1.5 rice-water ratio)
  • Deglaze, cover the lid and cook ('Pressure' mode for 3 mins. in IP) 
  • Pit the avocados and score them into big chunks (in the peel) and then scoop out the flesh
  • Add a little salt, lemon juice and lemon zest
  • Toss gently 
  • Add these avocados and chopped cilantro over the rice and toss gently
  • Toss the rice gently and serve immediately! 


Tips and Tricks:

  • To get perfect avocados, place firm avocados in a brown paper bag and fold over to close.  Leave it aside for a couple days until they become soft.  Use it (or) store it in the refrigerator for later use (they can stay good for 7-10 days in the fridge)
  • Zest along with the juice of the lemon enhances the flavor tremendously! 
  • Tossing the rice gently is important so as to not turn the avocados into a mush
