Aloo Gobi (Potato Cauliflower Curry)

Bursting with flavors and spices, the wafting fragrance of this popular comfort-food will draw everyone to the table!  This easy to prepare recipe is delicious when paired with rice, roti or chapati.  


Ingredients:

  • Diced potatoes - 2 cups
  • Cauliflower - 1 small head
  • Tomatoes - 3 large
  • Onions - 1 large
  • Garlic - 5 pods
  • Ginger - 1 inch
  • Red chilies - 4-6 (as per taste) 
  • Salt
  • Turmeric - 1 tsp 
  • Black pepper - 0.5 tsp
  • Cardamom - 3 pods
  • Cloves - 5
  • Cinnamon - 1 inch
  • Kapok bud (maratha moggu) - 2
  • Cumin - 1 tsp
  • Milk - 1 cup (optional)
  • Ghee (or) oil - 3 tbsp
  • Sugar - 1 tsp (optional)
  • Coriander leaves - 1 fistful

Method:

  • Chop the onions, garlic, ginger, tomatoes and coriander finely
  • Dice the potatoes and break the cauliflower into medium-sized florets
  • In a large vessel, heat 1 tbsp of ghee (or) oil ('Saute' mode in IP)
  • Add these in order - black pepper, cardamom, cloves, cinnamon, kapok bud, cumin and red chilies
  • Add chopped ginger and garlic and roast well
  • Add chopped onions and roast till they soften and start turning pink
  • Add chopped tomatoes and saute till the oil starts leaving
  • Add half the salt and mix
  • Transfer everything into a blender jar and make a smooth paste 
  • In another vessel, add 2 tbsp of ghee (or) oil ('Saute' mode in IP)
  • Add turmeric and diced potatoes
  • Mix well and saute for 5 minutes
  • Add the cauliflower florets, mix and saute for 3 mins
  • Add salt and mix
  • Add a quarter cup of water (be sure to not add more), deglaze, cover and cook for another 5 mins
  • When both potatoes and cauliflower have softened, add the ground paste and mix
  • Add half a cup of water and milk (if using, if not, use more water instead) 
  • Add sugar (if using)
  • Bring everything to boil together and turn off the heat 
  • Garnish with chopped coriander 
  • Serve hot with rice, roti or chapati


Tips and Tricks:

  • Chopping onions and tomatoes small expedites the cooking time
  • Deglazing the pot and using the water in the blender gets the vessel ready to cook the potatoes in the same pot quickly
  • It is important to not add too much water while cooking the cauliflower florets or they will become mushy
  • The tsp of sugar cuts the heat and brings out the sweetness of the veggies nicely
