Cucumber and Feta Salad

This amazingly simple salad will be a crowd-pleaser as quickly as it can be made.  These specific ingredients come together beautifully.  It is their natural taste and texture that do the trick!  


Ingredients:

  • Chopped cucumbers - 2 cups
  • Chopped red bell peppers - 2 cups
  • Corn on the cob - 2 cobs (or) roasted corn kernels - 1 cup
  • Feta cheese (or) Vegan Feta - 0.5 cup 
  • Crushed/chopped rosemary (or) lavender herb - 2 tsp
  • Lemon - 1
  • Oil - 2 tsp
  • Salt - as per taste
  • Black pepper powder (or) red chilli flakes - 0.5 tsp (optional) 

Method:

  • Zest the lemons (optional) and squeeze the juice
  • If using, roast and de-kernel the corn on the cob
  • Chop the cucumbers and red bell peppers into small cubes
  • Add lemon juice and zest
  • Add oil
  • Top with feta cheese and the chosen herb
  • Sprinkle salt 
  • Sprinkle black pepper (or) red chili flakes, if using
  • Toss gently with a salad spoon 
  • Serve fresh


Tips and Tricks:

  • Zesting lemons is optional.  But it does add to the flavor
  • If preparing ahead of time, do not toss the ingredients together or add salt.  This will prevent cucumbers from releasing water.  This keeps the salad crunchy and tasty
  • Use only one of the herbs as each one has its own strong and distinctive flavor
  • It is better to skip black pepper (or) red chili flakes as the herbs, cheese and veggies have a nice natural flavor on their own
