Banana Halwa

They say 'looks are deceptive'.  This delicacy is a great example of that!  Though it takes a little time to cook, using just a few ingredients the outcome is well worth it.  Needing very little added sugar, this constitutes for a very healthy dessert too!


Ingredients:

  • Ripe Bananas - 8
  • Sugar - 2-4 tsp
  • Cardamom - 3
  • Cashewnuts - 12
  • Ghee - 1 tbsp

Method:

  • Peel the bananas and mash with a fork
  • Break the cashews into small pieces
  • Melt the ghee in a large vessel and roast some broken cashews (if vegan, skip ghee and dry roast the cashews) ('Saute' mode in IP)
  • Scoop them out and set them aside
  • To the same ghee, add the mashed bananas and start stirring
  • Cook on 'medium' heat until ghee starts to separate nicely (if not using ghee, cook until the bananas start leaving the edges of the vessel)
  • Add sugar as per requirement and cook until it starts turning color
  • Cook for a couple more minutes till a shine is obtained
  • Add cardamom powder, roasted cashew pieces and mix well
  • Allow it to cool a little 
  • Serve warm or at room temperature with a garnish or roasted cashews


Tips and Tricks:

  • Initially, the halwa splashes while cooking.  So, taking a larger vessel is helpful
  • Mashing the bananas with a fork keeps them a little lumpy, giving a nice texture to the halwa
  • Medium heat gives them enough time to cook, without giving a burnt smell to the halwa
  • When ghee separates nicely, though the bananas are cooked, the color may not appear to change.  Upon cooling, it gets its beautiful brown color
  • Amount of sugar required depends on the ripeness of the bananas.  Riper the bananas, better the taste!
