Banana Oatmeal Soft Bake

This quick and versatile soft-bake can pass for breakfast or a dessert just by dressing up a little.  With a topping of ice cream and whip cream, it turns into a spectacular dessert with minimal calories!



Ingredients:

  • Ripe bananas - 3
  • Oatmeal - 3 cups
  • Egg - 1
  • Milk - 7 oz
  • Cinnamon - 1 tsp
  • Baking soda - 1 tsp
  • Salt - 2 pinches
  • Sugar - 2 tsp (optional)
  • Walnuts - 1 cup chopped
  • Chocolate chips - 0.75 cups
  • Vanilla essence - 0.5 tsp
  • Butter - 1 tsp 

Method:

  • Set the oven or air fryer to preheat at 375° F (190° C)
  • Grease the pan with the butter
  • In another vessel, mash the bananas with a fork
  • Break the egg into the banana, fluff and mix in
  • Add rest of the ingredients and fold in
  • Pour this batter into the greased pan
  • Bake in the oven for 30-40 minutes or until a toothpick in the centre comes clean
  • Rest it outside for 10-15 minutes before cutting 
  • Serve up the squares with a scoop of vanilla ice cream and some whip-cream (optional) on top


Tips and Tricks:

  • The sweetness of bananas is sufficient to sweeten this dish.  Very little sugar can be added optionally, based on preference
