Have some leftover butter paneer masala, but not enough to serve a meal for all? Get creative and upcycle it into a whole meal. With minimal active time in the kitchen, yet a delicious outcome, this is a must-try when crunched for time or inventory! So, be sure to make extra Butter Paneer Masala so it can be extended into this delicacy :).
Ingredients:
- Leftover Butter Paneer Masala - 1.5 cups
- Rice - 2 cups
- Water - 3 cups
- Salt
- Red chili paste/powder - 0.5 tsp (as prefered)
- Coriander leaves - 1 fistful
Method:
- Wash the rice in a cooker vessel
- Add the leftover Butter Paneer Masala and mix well
- Add the salt and red chili paste/powder
- Add the water and mix well so that the chili paste/powder and the gravy are homogenous with the liquid
- Close the lid and cook ('Pressure' mode for 3 mins. in IP)
- After opening, let it cool for at least 15 mins.
- Sprinkle chopped coriander on top
- Serve hot, along with yogurt (if prefered)
Tips and Tricks:
- Basmati rice works well for pulavs
- Water proportion is less here as the water content in the Butter Paneer has to be accounted for as well!
- A little chili spice and salt will be needed as the addition of the rice will cut the spices and salt
